腌制雪里蕻

雪里蕻洗净晾干至蔫
500g菜放30g盐3g花椒揉透
放入坛内密封一周

用料 

  • 黑芝麻椒盐馅
    • 面粉 50g
    • 黑芝麻 30g
    • 50g
    • 自制椒盐 8g
    • 蛋清 一个
  • 油皮
    • 普通面粉 100g
    • 猪油 35g
    • 10g
    • 45g
  • 油酥
    • 普通面粉 90g
    • 猪油 45g
  • 装饰
    • 白芝麻
    • 蛋黄 一个


做法  


自制椒盐:

一份花椒 一份小茴香 在锅中小火焙香 放搅拌机中 再放一份的盐 一起磨成粉

(因为用量小 大家可用多做点 以后做花椒 烧饼 肉都可以)


或者用花椒粉和盐配 4g花椒粉 4g

面粉在倒锅中小火炒熟

(炒熟状态 略放黄 有面的香味儿)

炒熟后放入盆中

黑芝麻倒锅中 炒熟炒出香味儿

倒搅拌机里 磨碎

也倒入盆中

再放50g 5g自制椒盐

一个蛋清

用筷子稍稍搅成絮状 再用手攥成团

(很容易成团的)


大约160g 分成16 每份10g

或者

分成十份 和正常大小牛舌饼差不多芝麻椒盐牛舌饼(北京小吃)的做法 步骤4

Tomato soup

Group 1
1 jalapeño minced
2 slices garlic minced
1/4 purple onion minced

2 large tomatoes chopped
1/3 large potato chopped

In a medium low hot pot, add some oil, stir fry group 1 till it smells good and ingredients becomes tender
Add in potato to make them a bit browny for the tart taste
Add in tomato and simmer till they become tender. Add a little water if needed.
Add 4 cups of boiled water and cook on low heat for 5 - 10 minutes till everything is mashable
Smoothie the soup and it is ready to enjoy

Shape 1 round
Make each as a square and add filling. Fold both 1/4 into center to form a 1/2 shape. Cut a few lines and roll and circle with cutting mark outside. Put the 4 circle into a 6 inch round pan


Shape 2 round
Divide rectangle into 5 slice and roll one on another into a big roll put into round pan

Shape 3 bundt
Divide sheet into 4x6 and put 4 piece one onto another and put it vertically into bundt pan, repeat the rest 4 rows

Shape 4 round
Roll into one long roll, cut from middle. Roll from both end into middle for the 2 piece and put them into round pan.

Shape 5 flat
Into 4. Roll each and cut from middle. Braid by twisting the two slice with cutting on top and form a circle. Put the 4 circle onto a sheet

Shape 6 toast pan
Roll into a long roll and push flat. Cut vertically into 3 slice and braid. Fold two side back down to form a rectangle and put into toast pan.

Ingredients Crêpe Batter: (makes 21-22 crêpes; 20 crêpes needed for cake)
1 6 tbsp unsalted butter [85 g]
Melt in a pan till browny and smell nutty

3 cups whole milk [710 mL]
Heat to steam but not boiling.

3 6 eggs [300 g without shell] 1/3 cup granulated sugar [67 g] 1/2 tsp salt [2.85 g]
Mix together but not over mix

4 1.5 cups cake flour [170 g] Mix into 3 till smooth. Slowly add 2 and 1 in.
Allow to cool. Sift and put in refrigerator overnight.
Green Tea / Matcha Pastry Cream: 5
8 egg yolks [160 g] 3/4 cup granulated sugar [150 g] 1/3 cup cornstarch [40 g] 1/2 tsp salt [2.85 g]
Mix together

6 4 cups whole milk [946 mL]
Slowly add into 5
Heat the pastry thicken for 7-10 minutes. Constantly stirring.

Boiling:

1. Add 15(or your meal portion) jiaozi into 4 cups of warm water in a pot and turn fire to high.
Stir the pot to avoid sticking.
2. Wait till the water is boiling (need human attention to avoid spread out, about 5 minutes?)
and add 1/3 cup cold water into the pot to cease down the boiling water
3. Repeat step 2 three times.
4. Take the jiaozi out and prepare some dipping sauce(soybean sauce/vinigar/sesame oil/chilli).
5. Enjoy

It also need about 20 minutes.

Quinoa Salad

Main ingredients
1. 1 cup of quinoa
2. 1 bunch of kale (use only leaves)

Options
* 1/2 cup chopped tomato
* Cooked egg/Bacon chip/Cheese/Nuts - any tasteful ingrediante of your choice

How to
1. Cook 1 cup of quinoa in rice cook
2. Add washed kale into boiled water for 30 seconds and take it out and chopped into small pieces
3. Add olive oil, balsamic vinegar, garlic salt... into mixing bowl, stir and melt the salt.
4. Add cooked quinoa and chopped kale into the mixing bowl.
5. Mix well the salad.
6. Add option ingredients into the salad and mix.
7. Serve.

What
1 Pork belly(2 pounds) - Cut into 1 1/2 inch cube

2 Ginger/Scallion/Garlic

3 Salt/Sugar(1 tsp)/Star anise/Soy sauce(dark 1 TBSP/light 4 TBSP)/Cooking Wine(1/2 cup)

How - Use instaPot(iPot)
* On saute mode, stir fry pork belly cubes(1) till some fat becomes oil for 3-5 minutes
* Add 2 into the pot and keep stir till you smell the scent of garlic etc for 1 minute
* Add 3 into the pot and stir for couple minutes.(You may add whatever now, for example, fried tofu, mushroom, potatos etc)
* Cover the lid and TURN the mode into other mode (for example Steam mode) or under pressure for 15 minutes.
* Let the pot cool down by itself. DON'T force to open the cover.
* After open the lid, there will be some liquid in the pot.
* On saute mode again, stir until the liquid is almost evaporated for about 5-10 minutes.
* Done. Enjoy!!!

4 cup 中筋面粉
1 TBSP 油
1 1/2 cup 开水

油加在面粉里稍拌匀,加开水汤面,揉在一起醒面十分钟。


500克韭菜 ,切碎
2包粉丝,热水泡软,切碎
4个鸡蛋,油煎,不断搅碎。
4块日本油豆腐,切碎。

调料
麻油/盐/白胡椒/蚝油/红椒碎/随意

调料加入馅里拌匀

醒好的面团分成16份,没份擀成圆形偏椭圆型,包入馅料,放平底锅加少许油煎熟。第一面加点水盖上先闷煎3分钟,打开锅盖再煎1分钟至金黄。翻面再小火煎2分钟至金黄。铲出放凉后可以冷冻保存。
