Green bean soup:

1. 1/2 cup of green bean
2. 6 cups of water
3. 1/4 cup of large pearl ball
4. 1 piece of brown sugar(optional)

Add 1 and 4 into water, bring the water to boil. Add 3 into the boiled soup, set fire to small for half an hour. Done.

Moisture Banana Bread

Group 1 - Sift and set aside

2 cups of all purpose flour
1 tsp baking soda
1/2 tsp baking powder

Group 2 - Cream this on low
1 stick of butter
1 1/2 cups of sugar
1/2 tsb salt

Group 3 - Add to 2 and mix again. Mix with 1.
2 eggs
1 tsp vanilla
4 tbsp(1/4 cup) sour cream

Group 4 - Mash them evenly into a smooth consitancy and mix with all
6 small/4 large riped soft banana

Preheat oven to 350F and bake for one hour
Cool for at least 30 minutes

Ingredients

Group 1
2 cups sugar
6 eggs
1 cup oil (may use apple sauce to replace some oil)
1 tsp vanilla

Group 2
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking sodar
1 tsp salt
2 tsp cinnamon
Dash of ground nutmeg

Group 3
1/2 cup chopped walnuts
3 cups grated carrots (I prefer baby carrots)

Directions
* Prepare group 1, 2 and 3
* Preheat oven to 350F
* Put group 1 into mixing bowl, beat 1 minute
* Sift group 2 and gradually add to mixing bowl, beat 1 minute
* Add group 3 into mixing bowl, stir well
* Grease cake pan.  Pour batter into pan and bake in the oven for 35-45 minutes or untill toothpick comes out clean.

1/2 cup 绿豆
6 cup 水
1/4 cup 大西米
1 片黄糖 (option)

绿豆冷水烧开,加西米进去小火煮半小时,文火再煮半小时,关火闷到西米呈透明状。

Group 1
All purpose 4 cups
Gluten 4 TBSP

Group 2
Dry yeast 4 tsp
sugar 1/2 cup
salt 1 tsp

Group 3
egg 1 (leave a little for coating)
Whipping Cream 1/2 cup
Milk 1 cup (or add till group 3 reach 12 oz)

1. Sift group 1 well twice.
2. Add everything into bread machine, set to dough and start.
3. After the first rise, repeat the cycle for second rise.
4. After the second rise, start the machine again to knead down the dough.
5. Take the dough out of the machine. Break into 16 even pieces.
6. Shape each piece to 2x4 inch rectangle.
7. Tri-fold the rectangle along the long side.
8. Roll the tri-folded dough and put it in the pre-coated baking pan.
9. Let the shaped bread rise 80%.
10. Coat the bread with egg.
11. Preheat oven to 325F and bake for 20 min or until done. You may put some water in the oven to keep more moist while baking.
12. Remove bread from oven and let it cold on rack.
13. Store the bread in a sealed container for next day use.

or use 9x5x2.5 in bread pan baking 40min at 325F.

1. 八杯糯米泡两小时加麻油酱油少许盐蒸熟。
2. 半磅肉碎(猪肉牛肉均可)加各种调料(酒,盐,酱油,糖,辣椒粉,茴香,你想得出来的调料)煸熟煸干。
3. 糯米和肉放大锅里充分拌匀。
4. 烧卖皮一包差不多把这些料包完。
5. 间隔开放蒸锅内开水锅蒸8分钟,凉透后放冰箱速冻,然后用盒子或塑料袋冷冻存放。

就是那个大光头Jim Lahey的免揉配方。

面包面和水,2:1
盐和快速酵母(我不信邪,就用家里的干酵母)各一点点
用手,筷子,勺子啥都行把面和水搅匀(稀糊糊的)
他是放室温下发酵12-18小时,我还是没信邪,就发两到三小时,但是用了比较热的水(别热岛到杀死酵母),还比他多加了一点点酵母。做出来的面包效果也非常好。

面发到表面全是小泡泡,就撒点干面把它挖出来,然后从四个方向各往中间折一下,在一块厨用毛巾上撒点面粉,玉米面,燕麦片,麦麸什么的,啥都行,就看你喜欢什么了。把有折口的一面朝下放上,上面再撒点面,用另一半毛巾盖上,发大一倍(大概半小时吧)后,提着毛巾,把面团翻到450度预热过的大铁锅里(折口朝上,烤好后会顺着折口咧出漂亮口子),盖着锅盖450度烤半小时,再打开盖烤15分钟就好了。

这个方子必须要用那个大铁锅。

Biga
1/2 cup flour
1/4 tsb yeast
1/3 cup water 100-110F
stir a minute and wait for 8 hours at 70F

Dough
2 1/2 flour
1 tsb yeast
1 1/4 cup water
stir and sit for 15 mimutes

Add
2 tsp salt
wait for 3 30 min
fold for 4x4 times

set oven 500F

make 2 round doughs

oil 2 round pan

some salt

coat the dough with oil

cover for rising 10 min
use fork to poke 25 holes
add herb

turn oven to 450
bake for 20 min
