Ingredients Crêpe Batter: (makes 21-22 crêpes; 20 crêpes needed for cake)
1 6 tbsp unsalted butter [85 g]
Melt in a pan till browny and smell nutty

3 cups whole milk [710 mL]
Heat to steam but not boiling.

3 6 eggs [300 g without shell] 1/3 cup granulated sugar [67 g] 1/2 tsp salt [2.85 g]
Mix together but not over mix

4 1.5 cups cake flour [170 g] Mix into 3 till smooth. Slowly add 2 and 1 in.
Allow to cool. Sift and put in refrigerator overnight.
Green Tea / Matcha Pastry Cream: 5
8 egg yolks [160 g] 3/4 cup granulated sugar [150 g] 1/3 cup cornstarch [40 g] 1/2 tsp salt [2.85 g]
Mix together

6 4 cups whole milk [946 mL]
Slowly add into 5
Heat the pastry thicken for 7-10 minutes. Constantly stirring.
4 tbsp unsalted butter [57 g] 2 tbsp vanilla extract [30 mL] 6 tbsp green tea powder, i.e. matcha [36 g] Add into 6 stir till blended and sift

Make 20-21 crep 1/4 cup each. Do not flip
Whipped Cream:
4 cups cold heavy cream [946 mL]
1/3 cup granulated sugar [67 g] Beat till thick and fold into 7

Assemble the cake by crep 1/2 of 9 for 20 layer plus to as 21. Left in refrigerator for at least 2 hours preferably overnight.
Topping: 1 tbsp green tea / matcha powder [6 g] A little extra butter needed for greasing pan

Spritz Cookies:

1 cup butter, softened
2/3 cup granulated sugar
2 large egg yolks
2 tsp milk
2 tsp vanilla extract
1/2 tsp almond extract
2 1/4 cups all-purpose flour

Oval Shape Nonstick Baking Tray, Size: 8.8 x 4.5 x 3.1 inch
Large eggs: 3
Milk : 60 g 1/4 cup
Cream cheese: 160 g
Unsalted butter: 35 g
Cake flour : 25 g (5 gram as adjustment to increase the thickness of the egg yolk batter)
Vinegar : 3 g 1/2 teaspoon
Sugar: 40 g 3 tablespoons
Preheated oven :250°F /120°C bake for 60 minutes
Then turn on the broiler for 3 minutes to color

1. Add 15(or your meal portion) jiaozi into 4 cups of warm water in a pot and turn fire to high.
Stir the pot to avoid sticking.
2. Wait till the water is boiling (need human attention to avoid spread out, about 5 minutes?)
and add 1/3 cup cold water into the pot to cease down the boiling water
3. Repeat step 2 three times.
4. Take the jiaozi out and prepare some dipping sauce(soybean sauce/vinigar/sesame oil/chilli).
5. Enjoy

It also need about 20 minutes.

Quinoa Salad

Main ingredients
1. 1 cup of quinoa
2. 1 bunch of kale (use only leaves)

* 1/2 cup chopped tomato
* Cooked egg/Bacon chip/Cheese/Nuts - any tasteful ingrediante of your choice

How to
1. Cook 1 cup of quinoa in rice cook
2. Add washed kale into boiled water for 30 seconds and take it out and chopped into small pieces
3. Add olive oil, balsamic vinegar, garlic salt... into mixing bowl, stir and melt the salt.
4. Add cooked quinoa and chopped kale into the mixing bowl.
5. Mix well the salad.
6. Add option ingredients into the salad and mix.
7. Serve.

1 Pork belly(2 pounds) - Cut into 1 1/2 inch cube

2 Ginger/Scallion/Garlic

3 Salt/Sugar(1 tsp)/Star anise/Soy sauce(dark 1 TBSP/light 4 TBSP)/Cooking Wine(1/2 cup)

How - Use instaPot(iPot)
* On saute mode, stir fry pork belly cubes(1) till some fat becomes oil for 3-5 minutes
* Add 2 into the pot and keep stir till you smell the scent of garlic etc for 1 minute
* Add 3 into the pot and stir for couple minutes.(You may add whatever now, for example, fried tofu, mushroom, potatos etc)
* Cover the lid and TURN the mode into other mode (for example Steam mode) or under pressure for 15 minutes.
* Let the pot cool down by itself. DON'T force to open the cover.
* After open the lid, there will be some liquid in the pot.
* On saute mode again, stir until the liquid is almost evaporated for about 5-10 minutes.
* Done. Enjoy!!!

Vegetable pancake

Slice Green onion/Leek/Zucchini/jalapeno/Carrot/Sweet potato/Onion
Mushroom aside on top of pancake only
Use 2 and 1/2 cup sliced vegetables
Add 3/4 flours into vegetables
Add salt/pepper
Add 3/4 water
Mix well
Use 12 inch skillet
Add mushroom on top and flit

1 tbsp soy sauce
2 tbsp vinegar
chopped dry chilly
sesame seed

3 eggs
1 1/2 whole milk
1 1/2 all purpose flour
1 1/4 tsb kosher salt
Fill 3/4 each cup
425 for 20 min and 350 for 20 min

2 large eggs at room temperature
1 cup whole milk
1 cup sifted all purpose flour
1/4 teaspoon salt
Speck of baking soda
Preheat oven to 425°.
Sift and measure flour, salt and soda. Set aside.
Beat the eggs at high speed until lemon colored (2-3 minutes).
On slowest speed, very slowly 1/2 cup of the milk. Beat until well mixed.
Add slowly (with mixer going on slow speed) the dry ingredients.
When mixed, stop beating.
Scrape sides of the bowl with a spatula.
Beat at medium speed and slowly add the remaining milk.
Beat 2 minutes.
Place well-greased muffin tin or popover pan into oven to warm up for five minutes.
Turn mixer to high speed and beat 5-7 minutes.
Batter should be smooth and about the thickness of heavy cream.
Pour batter through a strainer, and into well-greased, preheated muffin tins or popover pan.
Bake on the middle shelf of the preheated oven at 425° for the first 15 minutes.
Without opening the oven, reduce the temperature to 350° and bake 15 - 20 minutes longer.
Popovers are best served at once, but may be kept in the warm oven for up to five minutes.
Serve immediately with butter and strawberry jam.
