3 eggs
1 1/2 whole milk
1 1/2 all purpose flour
1 1/4 tsb kosher salt
Fill 3/4 each cup
425 for 20 min and 350 for 20 min

Ingredients
2 large eggs at room temperature
1 cup whole milk
1 cup sifted all purpose flour
1/4 teaspoon salt
Speck of baking soda
Instructions
Preheat oven to 425°.
Sift and measure flour, salt and soda. Set aside.
Beat the eggs at high speed until lemon colored (2-3 minutes).
On slowest speed, very slowly 1/2 cup of the milk. Beat until well mixed.
Add slowly (with mixer going on slow speed) the dry ingredients.
When mixed, stop beating.
Scrape sides of the bowl with a spatula.
Beat at medium speed and slowly add the remaining milk.
Beat 2 minutes.
Place well-greased muffin tin or popover pan into oven to warm up for five minutes.
Turn mixer to high speed and beat 5-7 minutes.
Batter should be smooth and about the thickness of heavy cream.
Pour batter through a strainer, and into well-greased, preheated muffin tins or popover pan.
Bake on the middle shelf of the preheated oven at 425° for the first 15 minutes.
Without opening the oven, reduce the temperature to 350° and bake 15 - 20 minutes longer.
Popovers are best served at once, but may be kept in the warm oven for up to five minutes.
Serve immediately with butter and strawberry jam.

Classic Waffle

Ingredients:

Group 1 (dry)
* 2 cups all purpose flour
* 2 tbsp sugar
* 4 tsp baking powder or if whisk the egg white separately to replace baking powder
* 1 tsp salt

Group 2 (wet)
* 2 eggs
* 1 1/2 cups warm milk
* 6 tbsp unsalted butter, melted or 1/2 cup vegetable oil
* 1 tsp vanilla extract

Instructions:

* Preheat waffle iron
* Sift dry ingredients
* Mix wet ingredients
* Pour wet into dry and blend
* Cook

和风酱

苹果泥 30g
洋葱泥 15g
橄榄油/白醋/味淋/酱油 各1TBSP
柴鱼片/精/白芝麻 少许

苹果 50g
姜 5g
洋葱 50g
红萝卜 50g
白醋 50ml
味淋 2TBSP
酱油 1TBSP

材料:

1 鲜鱼:1-4磅均可,我喜欢2磅左右的
2 腌料:酒/姜片/葱段/柠檬/椒盐
3 香料:豆豉/豆瓣酱/辣油/生抽/花椒/蒜头/洋葱
4 配菜:花菜/豆芽/土豆/莲藕/青瓜/芹菜

做法:

1 用1料腌鱼一个小时左右
2 腌好鱼入烤盘锡纸上,刷油,450烤20分钟
3 锅里加油,炒香香料3,加入配菜2,一起炒至5,6成熟
4 鱼烤至20分种时加入3炒好的料盖住鱼再烤20分钟

粉料:
第一组
粘米粉 150g
糯米粉 100g
绵白糖 55g
猪油 20g
水 100-110g
第二组
熟红豆 50g
红豆沙 120g
装饰用: 核桃仁,红枣,蜜饯,葡萄干

制法:
* 将第一组混合拌匀搓透,分成1/3(小份)和2/3(大份)。将红豆拌入大份内。
* 模具刷油,底下垫上油纸,用大份内一般的粉垫底,中间放上成圈的红豆沙,上面再铺上另一半大份的粉料。最上面盖上小份的白色粉料,饰料成型。
* 上蒸笼,沸水蒸40分钟左右,冷透后入冰箱改刀即成。

腊味合蒸

主料:各种蜡味
辅料:姜 蒜 干辣椒 花椒

腊味先放水里煮,水开后转小火煮25分钟,捞出切成3mm厚的片
用油将所有辅料炒香,再加入腊肉一起翻炒片刻,加少许糖和醋,稍翻炒,出锅放入盘内
将蜡味用大火蒸20分钟

Aebleskiver(空心球)

Group A:
2 egg whites

Group B:
2 cups all-purpose flour
2 teaspoons baking powder
1 tablespoon white sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
2 egg yolks
4 tablespoons butter, melted
2 cups buttermilk
1 cup vegetable oil for frying

Group C:
Chopped green apple cube about 1/2 inch size

In a clean glass or metal bowl, beat the egg whites with an electric mixer until they can hold a stiff peak. Set aside.
Mix together all ingrediantes in group B at one time and beat until smooth. Gently fold in the egg whites last.
Put about 1 tablespoon of vegetable oil in the bottom of each aebleskiver pan cup and heat until hot.
Pour in about 2 tablespoons of the batter into each cup and put 1 cube of apple into the batter.
As soon as they get bubbly around the edge, turn them quickly with a skewer(Danish cooks use a long knitting needle, but a fork will work).
Continue cooking, turning the ball to keep it from burning.

Ingredients
1 cup (packed) fresh Italian parsley.
1/2 cup olive oil.
1/3 cup red wine vinegar.
1/4 cup (packed) fresh cilantro.
2 garlic cloves, peeled.
3/4 teaspoon dried crushed red pepper.
1/2 teaspoon ground cumin.
1/2 teaspoon salt.

Cut 2 lb beef, 1/2 onion and 1 potato into 1 inch chunk

You can cook everything in instaPot.

Set pot on saute.

Add a little oil in pot, stir fry onion till they are tender.
Add potato into the pot, stir till a bit browny.
Add beef into the pot.

Add salt/paparika etc to taste
Add half 1/3 bottle of beer

Stir a bit and set pot to 30 minite timed cook.
Let the pot cool down till you can open the pot.
Set pot on saute again and let the liquid evaperate till your satisfaction.

Serve on top of rice. Or dip with bread.

冰片糖 1片/椰糖 2片

做法:
椰汁加热放入糖片融化
米粉过筛 充分混合
趁热将热的椰汁倒入粉里充分搅拌成糊状 不要太热使粉熟化
一个中号白碗抹油 将拌好的迷糊倒入 高压锅蒸半小时
